Lentil Soup (Shorbet 'Ads)
Also a traditional Egyptian dish.
- 1/2 cup vegetable oil
- 1 large onion, chopped
- 1 large carrot, chopped
- 1/2 t cayenne pepper
- 2 T cumin
- 1/2 T tomato paste
- 7 C water
- 2 medium tomatoes, diced
- 1 t leaf thyme (dry)
- 1 C dry red lentils
- 4 boullion cubes
In a large pot, heat oil over medium high heat & fry onions an carrots until golden brown. Add cayenne, cumin, and tomato paste and fry about 1/2 a minute until the fragrance comes out. Add water, tomatoes, thyme, boullion, and lentils. Bring to a boil and cook until lentils are tender, about 1/2 and hour. Blend with immersion blender.
